Quite a few people have asked about this, and we ended up having to take it to bits again to sort a dodgy lead with the radio yesterday, so I took some pics.
Tools needed:
Torx bit no 20
Torx bit no 30
Radio keys
Flathead screwdriver.
First disconnect the battery. You're working in the dash area where there is sensors for the airbags. You don't want to disturb one and have a bag going off in your face!!! Disconnect then leave for 10 mins.
Pull the white light housing out from the bottom of the centre bit. Then undo the 2 torx screws:

It will then fall off like this. There's 2 screws at the back you'l need to remove. Pull the connections off the buttons and remove bottom section:

Then there's a couple more under there:

Pull the radio out. The Beetle's radio has it's own kind of key. Do not try and use Golf keys, they won't work. Apparently VW will pull it out for free tho. Make sure you have the radio code handy before you remove the radio.

You will now see 2 more torx screws, remove them:

Get a flat blade screwdriver and prize the grab handle covers off.

Then undo the torx screws (30):

And remove the grab handle. Do the same with the vase holder.
Slide the far centre bit of the dash (near the windscreen) forward, this exposes 2 more screws:

Undo them, then simply pull the cover off! There's no need to take the heater dials etc apart.
If anyone has any more pics to add to this for different years, then feel free to do so.
